THE SALT HOUSE
Salt forms part of the historical identity behind the name Les Salines. Traditional salt-making on Mauritius’s west coast is shaped by a simple relationship between sea, sun, time and human craftsmanship.
The Salt House takes inspiration from that heritage and elevates it into a contemporary rooftop dining experience. Here, salt becomes a symbol of craft, transformation and place.

A refined destination restaurant with premium seafood, grilled meats, charcoal, smoke, fermentation, seasonal ingredients and local produce. A curated Salt Library could introduce selected salts and tableside finishing.
